Origin Story: Followers of the Lay’s Flavor Department in Thailand will know that they have a near obsession with taking messy or difficult to eat street foods and converting them to an easy to eat potato chip. This month’s honoree is an intensely umami taste of the sea, stir-fried squid eggs in a spicy seafood sauce.
