Flavor: Boat Noodles
Country: Thailand
When Seen: January 2023
In a Bite: Nice aroma, pork flavor, a bit spicy, with a bitter tail
In a Haiku: Without the cow’s blood. Or stench of canal water. Same boat-bred flavor.
Origin Story: This iconic Thai noodle soup has its origins in the boat vendors who used to sell various food and other items along the many canals and waterways of central Thailand. The secret ingredient was a dollop of fresh cow’s blood and herbs. Nowadays, this dish can be found in restaurants on land as well, and now even condensed into a powder and sprinkled on potato chips courtesy of the Lay’s Flavor Department.
