Origin Story: When you think of Thai food, baked spinach with cheese might not immediately come to mind, but this Western-inspired dish is actually fairly common to find at night markets and some chain restaurants. Sometimes, though, you want the idea of eating that dish without having to actually consume any spinach. That’s the genius behind this creation.
