Origin Story: Larb is a minced meat dish loaded with mint, chili, and other delicious seasonings that hails from Laos and ethnic Lao communities in northeastern Thailand. Its perfect balance of flavors has made it popular all over Thailand. Modern iterations on this classic dish include rolling them into balls and deep frying them. That variation was the inspiration for this flavor, perhaps because just like the fried version, these chips are crunchy and can be eaten on the go.
