Origin Story: You might be thinking to yourself, how is cheese with pepper different than spicy cheese? It all comes down to who is leading the dance. If you want the spice to be out in front, go with the spicy cheese, but if you want a more subtle spice, then let the cheese lead, followed by the pepper.
