Origin Story: Esan, or Isaan, is the region in Northeast Thailand, and this flavor is inspired by their take on the hot pot. Very traditionally, its ingredients include a mix of cow or buffalo meat, vegetable, herbs, and a bitter sauce that consists partly of cow/buffalo bile and early stage poop.
