Origin Story: Laab is a quintessential spicy and minty minced meat dish from the northeast of Thailand–and across the border in Laos, with saab nua being an adjective in Lao describing how delicious it is. While some of the young laab sellers by the Hualampong railway station in Bangkok have long been rumored to be selling it as a front for another type of service, it was the traditional purveyors of this dish that captured the inspiration of the Flavor Department for this chip.
