Origin Story: Emmental—that hole-filled, golden cheese born in the Emme River valley of Switzerland—has been a French favorite for centuries. Rather than import the wheels whole, the Lay’s Flavor Department struck a deal with a small cooperative in the Haute-Savoie region, trading flavor notes in exchange for a vat of their finest Alpine milk culture. The result: a chip that carries the nutty, slightly sweet essence of Emmental without needing a cheese knife.
